Easiest Roasted Cajun Potatoes
I am not kidding! This is a really great tasting, fast, and easy recipe for roasted potatoes. You will not regret trying this recipe out! Have it for brunch, lunch, dinner, second dinner, or snacks… Within 25 minutes you can be eating a potato dish that you could’ve sworn you got at a restaurant. What are you waiting for?
Before we get started, turn on your favourite potato cooking appliance. I love using my air fryer for this but have gotten the same results with the oven! If you are using an oven or air fryer that needs to preheat, preheat to 400 degrees Fahrenheit.
We start with getting the potatoes ready. I used a bag of baby potatoes. They are about 20cm in size (about 3/4 of a inch if you prefer). You can also cut up any potato to this size if you don’t have baby potatoes. Give them a wash so that they are free of dirt! If you are opting to cut up larger potatoes, I recommend you wash them again after cutting to get rid of some of the starches (this will give you a better browning on the final product).
You want to then, dry off the potatoes with a paper towel or clean cloth. The better you dry them off, the crispier your potatoes will be! Any moisture left on the potatoes will encourage “steaming” instead of roasting.
Spray/apply a thin layer of oil on the spuds. I use canola oil as my regular daily oil; feel free to substitute it with your oil of choice! Put a pinch of salt, pepper, and garlic powder. Be careful not to over season at this point as we will be heavily seasoning at the end!
Throw the potatoes into the air frying basket. Make sure to have a single layer of potatoes for the best results. Potatoes like their space too!
Let them roast for 10 minutes. Give them a little shake/toss. Apply another thin layer of oil at this point. I am using a Misto oil sprayer and it is perfect for doing this hassle and mess free!
Let them roast for another 10 minutes or till they are ready. A fork or knife should freely go through a potato when ready.
When the potatoes are done cooking, immediately remove them from the oven/air fryer and put them in a mixing bowl. Season with a pinch of salt, Cajun seasoning*, give them a little toss, throw some parsley on top, and serve.

Cajun Roasted Potatoes

Ingredients
1 bag (454g) of baby potatoes (approximately 3/4 inch in size)
1 teaspoon cooking oil
1 pinch of salt
1/4 teaspoon of freshly ground black pepper
1/4 teaspoon of garlic powder
2 teaspoons of Cajun Seasoning
1/2 teaspoon of Parsley (optional garnish)
Instructions
1. Adjust the oven rack to the middle position and preheat oven to 425°F (218°C).*
2. Wash your potatoes: Make sure you get all of the dirt off of the potatoes. If you are using cut larger potatoes, wash them a couple times until the water rinses out less cloudy/starchy.
3. Dry your potatoes: Thoroughly dry off the potatoes with a clean cloth or paper towel. This is important and crucial to achieving crispy potatoes.
4. Lightly coat the potatoes in a medium-sized mixing bowl with cooking oil.
5. Season the potatoes with salt, freshly ground black pepper, and garlic powder. Give the potatoes a good toss to evenly coat each potato.
6. Evenly lay out the potatoes on your cooking tray. Make sure they are a single layer and not overcrowded for the best results.
7. Roast potatoes for 15-20 minutes (depending on the size of your potatoes). Use a knife or skewer to check if the potatoes are done. You should be able to pierce all the way to the center easily if it is fully cooked.
8. Remove the potatoes from the oven and put into a medium-sized mixing bowl. Immediately season with the cajun seasoning.
9. Plate, garnish with parsley, and serve.
*If using an air fryer or convection oven, set to 400°F (205°C).
